Preparing for Christmas
It’s that time of year again, especially for the family cooks, to be thinking about and preparing for the festivities ahead; the Christmas dinner, Christmas or New Years eve party as well as the joy of buying a little something for the children, friends and relatives. It really is a busy time for all.
The Christmas Cake
This year is no exception when it comes to making the Christmas cake. The one that is truly loved by all here is the rich fruit cake with lots of dried fruit steeped in cherry brandy for 24hrs or more, then mixed in with all the other ingredients and baked for about 3hrs or so depending on the size and the recipe. To get the best flavour out of fruit the cake has to be baked well beforehand, wrapped up and stored in an air tight container. Then, periodally unwrapped, turned upside down, pricked with a fork and drizzled with some more liquer.
Ah! that wonderful rich smell of fruit, spices and liquer!
