Courgettes in tomato sauce Not home-grown courgettes at this time of year but a tasty dish nevertheless to accompany the Easter lamb or pork roast or any meat for that matter whatever the time of year. It’s simple enough to for anyone to make. Prepare and cook it the day before and keep it refrigerated overnight. Always tastes better the following day. Warm up the courgettes in tomato sauce; serve this colourful side dish as and when needed during your festive meal. Your family and guests will love it! What you will need: 1 deep frying pan, or sauté pan with a lid. Ingredients: 4 courgettes 1 red pepper 1 yellow pepper 1 green pepper 1 onion 2 cloves of garlic 1 tin chopped tomatoes 2 tbsp tomato puree 1 tbsp sunflower oil Salt & Pepper Fresh herbs: Oregano, parsley, thyme or 1 tbsp dried Italian herbs 1 mild chilli(optional Preparation time: 10-15 minutes How to cook Courgettes in tomato sauce. 1.
